This coffee cake has 3 steps: Cake, Filling and Glaze -- It should take LESS THAN ONE HOUR!!
And the best part? It starts with a box cake mix! Let's go!
Oven: 350F Pan: 13x9 greased baking pan Ingredients: CAKE: Yellow Cake Mix box 1 Cup Sour Cream 3/4 cup vegetable oil (or canola) 4 large eggs FILLING: 1/3 cup honey 1/2 cup brown sugar 1T ground cinnamon 1/2 teaspoon nutmeg nuts optional GLAZE: 2 cups powered sugar 1/3 cup milk 1-2 teaspoons vanilla extract
Directions: Cake: On a slow speed, mix all ingredients together with an electric mixer. About 1-2 minuets. Scrape down the sides of the bowl (always good idea for cakes and cookies). Then mix at medium speed for 2-3 more minutes, until thickened and well-blended. Pour batter into your greased baking pan. tap the pan on the counter a couple of times to smooth out. Filling: Now, simply drizzle the honey over the batter. Sprinkle the remaining filling ingredients on top. Take a knife and gently cut through the batter to lightly mix these ingredients in.
Bake at 350F for about 37-40 minutes. Just like a regular cake, the top should spring back when touched. Remove and cool the cake.
Glaze: Combine Powdered sugar, vanilla and milk and stir until well blended. It will look like too little milk, but keep stirring! if it's too thin, add a little more sugar. but you want it to pour out of your bowl. Slowly pour the glaze over the hot cake. it will spread out. Allow the cake to cool for about 15 more minutes to "set" before cutting. Serve warm if possible! That's th best!
